We’ve all seen this creamy-textured fruit passing through our social media feeds. The avocado is still hipster’s and millennial’s favorite superfood. Which we totally understand because to be honest, who doesn’t drool over the thought of and avocado-topped toast for breakfast?
Here’s some good news: avocados have loads of health benefits. They prevent high cholesterol and are filled with antioxidants like vitamin E. So make you and your body happy with the following recipes.

Strawberry avocado salad

Ingredients
20 strawberries
1 avocado
100 g (4 ounces) spinach
½ tbsp hemp seeds, optional
black pepper & sea salt, to taste

Method
Slice the strawberries and avocado into pieces. Wash the spinach and combine all of the salad ingredients in a bowl. Add the hemp seeds, if you’re using them, black pepper and sea salt. Toss. Then make the dressing. Combine all the ingredients in a small mixing bowl. Stir well to combine. Divide the salad across two plates and top with the dressing.

Ingredients
5 avocados
2 sun-dried tomatoes
1 jalapeño (or more)
1 medium onion
2 tbsp extra virgin olive oil
1 tsp lime juice (you can add more if you like)
a small handful parsley or cilantro
a pinch of sea salt

Method
Halve the avocados, remove the pits and spoon the flesh into a bowl. Mash until smooth using a mortar and pestle or just a fork. Finely chop the tomatoes, jalapeño, onion and the parsley or cilantro. Combine with the avocado, adding the olive oil, lime juice and salt. Stir until creamy and well combined. Transfer the mixture to a nice serving dish and garnish with a bit of chopped onion, tomato and parsley.

“Power” omelette with avocado

Ingredients
For one omelette:
2 eggs
1 tbsp rice milk/plant based milk
A pinch of sea salt
1/2 tsp dried oregano
A pinch of black pepper
A handful of fine cut basil leaves
2 tsp coconut oil
A handful of baby spinach
Half an avocado
1/2 tsp honey
A handful of walnuts
30 g soft goat cheese
Cayenne pepper (optional)

Method
Put the eggs, milk, black pepper and salt in a bowl. Whip the mixture and add the basil while stirring. Put on the frying pan, as soon as the oil melts add the mixture and put the spinach on top. When the eggs are melted, turn off the fire plate. Spoon out the avocado pulp and cut it in bars. Cut the walnuts into fine pieces and strew over the spinach. Then crumble the omelette witch goat cheese and honey. Roll up the omelette and put it on a plate. If you like it spicy, you can add a small pinch of cayenne pepper. Not too much though… Enjoy!
